Fricadals

Fricadals are delicious, spiced chicken patties that are perfect for any occasion. Originating from South African cuisine, these mini kebabs are not only tasty but also incredibly versatile. They can be served as a main dish or as an appetizer at gatherings, making them a hit at family meals or celebrations.

I love making Fricadals when I have friends over or during festive occasions. The combination of tender chicken, flavorful spices, and the softness from the bread creates a mouthwatering experience with every bite. They can be enjoyed on their own, or paired with bread, puri, or roti for a satisfying meal. Plus, these patties can be made ahead of time and frozen, making them a convenient option for busy days.

Ingredients

  • 1 kg chicken fillet
  • 8 slices white bread
  • 3 onions, finely chopped
  • 3 tbsp crushed green chilies (adjust to taste)
  • 6 cloves garlic, crushed
  • 2 eggs
  • 2-3 tsp salt (to taste)
  • 1 ½ tsp crushed cumin
  • ½ cup freshly chopped coriander (dhania)
  • 2 tsp baking powder
  • Ghee or butter (for frying)
  • 1 tbsp lemon juice
  • 2 tbsp water (for steaming)

Instructions

  1. Prepare the Bread Crumbs:
In a food processor, process the white bread until it reaches a fine breadcrumb texture. Set aside.
  2. Process the Onions:
Process the onions until finely chopped, then squeeze out any excess water to prevent the mixture from becoming too wet.
  3. Mince the Chicken:
Using the food processor, mince the chicken fillet until finely chopped but not pureed.
  4. Combine Ingredients:
In a large mixing bowl, combine the breadcrumbs, processed onions, minced chicken, crushed green chilies, crushed garlic, eggs, salt, crushed cumin, chopped coriander, and baking powder. Mix well until all ingredients are thoroughly combined.
  5. Shape the Patties:
Using your hands, shape the mixture into flat, round mini patties or kebabs.
  6. Freeze:
Arrange the patties on a baking tray lined with parchment paper and freeze until solid. Once frozen, transfer them to a zip-top bag or airtight container for longer storage.
  7. Fry and Steam:
When ready to cook, thaw the patties. Heat ghee or butter in a pan over medium heat. Fry the patties until golden brown on both sides, about 3–4 minutes per side. Add 1 tablespoon of lemon juice and 2 tablespoons of water to the pan, cover, and steam on low heat until the patties are cooked through and tender.
  8. Serve:
Enjoy your Fricadals with bread, puri, or roti, and your favorite dipping sauce or chutney.
